Sage Roasted Chicken

This simple sage chicken recipe can be made by cooks with little experience since it is nearly fail proof.

*1 roasting chicken, about 5 1/2 pounds
* 2-3 tablespoons dried sage

* 1 teaspoon rosemary

* 1 teaspoon thyme

* Dash of pepper

*1/4 cup Olive Oil
* 3 cloves garlic, coarsely chopped

* Salt and pepper
* 1 orange, unpeeled, cut in wedges

* 1 onion (chopped)


Heat oven to 375 degrees F.

Wash chicken and pat dry.

Place chicken in a roasting pan.
In a food processor, process the rosemary, thyme, pepper, and garlic until finely minced or pasty in consistency.

Using your fingers, spread the spice mixture over the entire chicken until all sides are well coated. (make additional spice mix if needed).

Squeeze orange juice inside the chicken, then place orange wedges and chopped onions in the cavity of the chicken.

Sprinkle the chicken lightly with salt and pepper all over.

In a small bowl, mix the ground sage into the olive oil. Using a basting brush, paint the entire chicken with the sage olive oil. Save extra oil.

Cook the chicken for 2 hours, basting every 20 minutes. Once you run out of olive oil, collect the pan drippings to use for basting.

Allow chicken to stand for 10 minutes before slicing.
Serves 4 to 6.
